GFCF (Gluten Free, Casein Free) Chocolate Chip Cookies
Ingredients
2 cups multipurpose baking mix ( Like gluten free bisquick)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup Earth Balance Soy-Free Buttery Spread
1/2 cup granulated sugar
1/2 cup brown sugar (packed)
1 egg
1 tsp vanilla
1 cup Enjoy Life Semi-Sweet Chocolate Chips
Preheat oven to 375 F
In large mixing bowl, combine baking mix, baking powder, baking soda, and salt. Set aside.
Soften buttery spread in medium, microwave-safe bowl.
Add sugars, egg, and vanilla to the buttery spread and mix well.
Pour sugar,egg,butter mix over dry ingredients and mix until thoroughly combined.
Add chocolate chips and mix well.
Drop rounded teaspoons roughly 2 inches apart onto ungreased cookie sheet.
Bake 8-10 minutes (until the edges of the cookies begin to turn brown).
Allow to cool slightly before removing to wire rack.
The recipe says you'll get 4 dozen 2 1/2 inch cookies, but I like a little more generously sized cookie so I only got 2 1/2 dozen.
